Red Bell Pepper Ketchup
- 6 large red bell peppers, quartered and deseeded
- 1 cup red wine or balsamic vinegar
- 1 onion, peeled and chopped
- 2 apples, peeled, cored and roughly chopped, or equivalent diced watermelon rind (outer hull removed)
- 1/4 tsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp cinnamon
- 1/8 tsp nutmeg
- 1 cup granulated sugar
- 2 tomatoes, seeded and skinned
- 1/2 tbsp liquid smoke
- 1 tsp salt (more or less)
